This Creamy Veggie and Chicken Pasta is a quick one pot meal that is super easy to make and great for a weeknight dinner. You might even have the ingredients at home right now.
In a large heavy bottom pot, place the vegetables, chicken, pasta, spices and bullion cube. Fill the pot with water just enough to cover the pasta.
Cover and bring the pot to a boil, once boiling, turn the heat down to a simmer and cook until pasta is tender.
Uncover and add butter and cream cheese. Cook over medium until melted and thick, maybe 3 minutes.
Add Parmesan and season additionally as needed. Enjoy hot!
