GRILLED REUBEN SANDWICH

So it is the day after St.Patrick's Day, you drank way too much green beer and have a ton of corned beef left over. What do you do with it? Well I am going to show you how to make a super yummy grilled reuben sandwich that will be sure to make you smile.

Ingredients

  • 2 tablespoons butter
  • 4 slices rye bread
  • 4 slices corned beef
  • 4 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/2 cup Thousand Island dressing
  • Make your own Thousand Island dressing:
  • 1⁄2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon white vinegar
  • 2 teaspoons sugar
  • 2 teaspoons sweet pickle relish
  • 1 teaspoon white onion, finely minced
  • 1⁄8 teaspoon salt
  • 1 dash black pepper

Place butter on the grill, pan or directly on the bread. Place bottom slice of bread on grill or pan and layer with dressing, sauerkraut, corned beef and cheese.

Grill on both sides until golden brown and toasted. Cut in half and enjoy!
