Poached Cooking

  • 6 eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/8 teaspoon salt
  • Freshly ground black pepper
  • Paprika, for garnish

Hard boil eggs and cool completely.

Crack egg shells and peel under cool water. Dry with paper towels. Slice the eggs in half lengthwise, removing yolks into a bowl, and placing the whites on a plate.

Mash the yolks by passing them through a wire mesh sieve. Add mayonnaise, mustard, salt, and pepper, and mix well.

Pipe the yolk mixture into the egg whites using a piping bag. Sprinkle with paprika and serve.
