PESTO PORK CHOPS with cauliflower

YIELD: 6-8 servings

  • 6-8 boneless pork chops, 1 inch thick
  • 1 head of cauliflower, cut into florets
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 cup herb pesto

Preheat an oven to 400 degrees F. Line a baking sheet with foil and lightly grease.

In a bowl or zip top bag mix together olive oil, pesto, salt, pepper, and onion powder. Add the pork and cauliflower to the pesto mix and toss to coat. Place seasoned pork chops and cauliflower onto the prepared baking sheet, making sure not to touch so they roast not steam.

Bake in the preheated oven for 20-35 minutes, or until pork chops reach an internal temperature of at least 145 degrees F.
