Freezer Breakfast Burritos with Sausage

YIELD:18 burritos

TOTAL TIME:45 minutes


  • 18 eggs, scrambled
  • 1 package of your favorite shredded cheese
  • 1 package fresh or frozen brown and serve sausage
  • 1 bag of fresh or frozen shredded hash brown potatoes
  • 18 burrito size tortillas, any flavor
  • Salt, pepper and paprika

Cook and brown the sausage according to the package directions, cut up into small pieces and place in a large mixing bowl.

Cook hash brown potatoes according to the directions, adding salt, pepper and paprika to taste. Once brown, place in a large mixing bowl with sausage.

Heat pan over medium heat, add butter or oil and when hot, add eggs. Scramble until soft, adding salt, pepper and paprika to taste. Please in bowl with sausage and potatoes.

Mix all ingredients that are in the large mixing bowl well. Place a tortilla on a sheet of foil, scoop about ¼ - ⅓ cup of the filling onto the tortilla, top with a sprinkling of cheese. Fold and roll tortilla into a burrito shape and wrap with foil.

Freeze until ready to eat. To heat, unwrap from foil, and rewrap in a paper towel and place on a microwave safe plate. Microwave for 2 minutes, check to make sure it is completely warm, if not return for 20 second intervals.
