My Favorite Everyday Salad


Ingredients:

  • 4 oz of homemade pressure cooked shredded chicken OR 2.5 oz of store bought rotisserie chicken
  • 1/2 oz of your favorite balsamic dressing
  • Seasonings (salt, pepper, garlic powder, onion powder, chili flakes)
  • 1/2 oz soft crumbled goat cheese
  • 1/2 oz dried cranberries
  • 1/2 oz roasted pumpkin seeds (pepitas)
  • 2 cups of baby arugula

YIELD:1 salad

  • Calories - 277kcal
  • Total Fat - 19.3g
  • Carbohydrates - 9.9g
  • Dietary Fiber - 1g
  • Sugars - 7g
  • Protein - 16.8g

DIRECTIONS:

Place balsamic dressing, equal parts cold water and seasonings in a large bowl. Mix to combine.

Add arugula on top of the dressing and toss to coat.

Top dressed arugula with goat cheese, cranberries, pumpkin seeds and chicken.

Toss all together and enjoy!

I make this salad, or some variation, pretty much every day. I sometimes use other types of salad greens, baby spinach is a popular choice. Depending on whats in season, I also add strawberries, roasted beets, blueberries or grapes. Skies the limit with this recipe.
