Confetti Tuna Lettuce Wraps


Ingredients:

  • 2 pouches of Starkist Tuna Creations Ranch
  • 1/2 tablespoon of Balsamic Dressing
  • 3oz Cucumber
  • 1/2 of a Bell Pepper
  • 1/2 of a Medium Tomato or 6-7 Grape/Cherry Tomatoes
  • Butter, Bib, Romaine or Green Leaf Lettuce Leaves for wrapping
  • Salt, Pepper, Garlic Powder and Onion Powder

DIRECTIONS:

Dice up the bell pepper, cucumber and tomatoes into "confetti" pieces and add to a bowl.

Season with spices to taste and mix to distribute.

Add the tuna to the bowl, as well as, the balsamic dressing. Mix to combine everything evenly.

Scoop a few spoon fulls onto a clean lettuce leaf and enjoy!

This is a super quick lunch, or snack, that is packed with protein and veggies! It is also really easy to modify to fit what you have on hand. You can use plain tuna in a can, if you do not have any Starkist Creation Pouches. You can even switch up the vegetables for your favorites, like celery, onion, radish or carrot. The confetti tuna mixture is also great in a wrap, on a roll, on crackers, all by itself, mixed into a green salad or how about a tuna melt. So many options.
