Zucchini Pizza Rounds


Ingredients:

  • 1 medium/large zucchini
  • 2/3 cup pizza sauce or marinara sauce, I use Jersey Italian Gravy
  • 2/3 cup shredded mozzarella cheese
  • Parmesan cheese, to taste
  • Salt, red pepper flakes, oregano, garlic powder and onion powder
  • Whatever other toppings you would like

YIELD: about 14 Rounds

  • Total Sugars - 0.6g
  • Protein - 1.7g

DIRECTIONS:

Preheat oven to 400°. Line a baking sheet with parchment paper or lightly spray with cooking spray.

Slice the zucchini into rounds about 1/4 inch thick. Depending on the size of your zucchini, you might get about 14 rounds.

Lay the rounds out on the baking sheet leaving a small amount of space in between.

Divide the pizza sauce between the rounds evenly and spread out with a spoon.

Divide the mozzarella and the parmesan between the rounds evenly. Top with any other pizza toppings you wish, be creative! Season to taste.

Bake in the oven for 10-12 minutes or until the cheese is melted. Turn off the oven and turn on the broiler, broil the cheese for a few minutes, just until golden brown.

Enjoy a few rounds with a side salad and you've got yourself a meal!
