Stove Top Kettle Corn

Ingredients:

  • 1/2 cup popcorn kernels
  • 1/4 cup coconut oil
  • 1/4 cup sugar, regular or coconut palm
  • Salt to taste

YIELD: 1 large bowl

DIRECTIONS:

Heat a large heavy bottom pot with a lid, over medium high heat and add the coconut oil.

Melt the oil, add 2 kernels and when one pops, quickly stir in the kernels and sugar.

Place the lid on, and using two pot holders hold the lid closed, shake the pot back and forth over the burner. Continue moving the pot until the popping slows or stops.

Remove from the heat, pour into a bowl and toss with a salt.
