Air Fried Salmon over a Warm Corn and Asparagus Salad


Ingredients:

  • 4 salmon fillets, I use Bluehouse Salmon
  • 4 fresh corn on the cobs
  • 2 bunches of fresh asparagus
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup tamari soy sauce
  • 1 teaspoon of grated fresh ginger
  • 1 teaspoon of grated fresh garlic
  • 2 teaspoons sesame oil
  • salt and pepper to taste

YIELD: 4 servings

DIRECTIONS:

Take the salmon out of the fridge about an hour before you are going to cook it, let it come up to room temperature. Then, seasoned it very well with salt and pepper. Into the air fryer it goes at 390F for 9-11 minutes. ⁠It is perfection, juicy and flavorful. The best part, no smell, none at all. While it is cooking, prepare the warm salad.

Mix tamari soy sauce, ginger, garlic and sesame oil together in a small jar and set aside.

Cut the corn off the cob and the asparagus into bite sized pieces. Add to a hot pan with a spray of oil, heat until just tender, season with salt and pepper. Divide amongst 4 plates, top with a salmon fillet, sauce and toasted sesame seeds.
