Mint Chocolate Crispy Squares


Ingredients:

  • 4 tablespoons butter
  • 16 oz bag mini marshmallows
  • 1 teaspoon mint extract
  • 6 cups Cocoa Pebbles cereal
  • 1 box of Andes Mint Chocolates, chopped, about a 1/2 cup
  • 1 cup white chocolate chips
  • 1 heaping teaspoon coconut oil
  • 1 teaspoon mint extract
  • Green food coloring

YIELD: 9 servings

DIRECTIONS:

Line a 9-inch square baking dish with parchment paper, spray with oil spray. Set aside.

In a large heavy bottom pan, melt butter over medium heat. Once melted, add the marshmallows. Reduce heat to low and continue stirring until completely melted.

Remove from heat and stir in the first teaspoon of mint extract. Add the cereal and stir. Right before you pour into the pan, add the chopped mint chocolates.

Pour into the prepared baking dish. Press GENTLY with your fingertips just until completely spread out, butter or spray your hands to make it easier. Allow to set, about 1 hour.

Melt the white chocolate and coconut oil in the microwave in 30 second intervals stirring in between. Add the mint extract and green food coloring, stir smooth. Drizzle over the cooled and cut squares.
